Raddichio Salad with Fried Capers

We can’t stop and won’t stop making this delicious raddichio salad! It’s an epic blend of beautiful bold flavors! Easy to make and always a fan favorite.

Ingredients:

1 head of radicchio

handful of Italian parsley

1/4 c capers

1/4 c avocado oil

1/2 c of grated parmesan

Salad Dressing

1 lemon

1 clove of garlic

1/2 ts of Dijon mustard

lots of ground pepper

pinch of salt

Prep

  1. Finely chop radicchio and Italian parsley

  2. dry capers thoroughly with paper towel squeezing out any liquid. Heat avocado oil to medium, fry until the capers are crispy. Be cautious, they can burn quickly. Remove from pain and place capers in strainer.

  3. Mince garlic and combine all salad dressing ingredients together.

  4. Assemble salad ingredients together and incorporate salad dressing with salt and pepper to taste. Toss and serve!
